Toffee Cookies

1 cup sugar

¾ cup butter, softened

1 egg

1 teaspoon vanilla

2 cups flour

1½ teaspoons baking powder

¼ teaspoon baking soda

½ cup english toffee bits (Heath Bar)

sugar to sprinkle on


Preheat oven to 350 degrees. Combine sugar, butter, egg and vanilla in a large mixer bowl. Beat at medium speed for 1 or 2 minutes. Reduce speed to low. Add flour, baking powder and baking soda. Beat until well mixed. Stir in toffee bits by hand. 


Shape rounded teaspoons of dough (or smaller) into balls. Roll in sugar. Place 2 inches apart on an ungreased cookie sheet. Flatten each ball with the bottom of a glass to 2¼ inch circles. If glass sticks, dip into sugar before pressing on ball. 


Bake 9 to 10 minutes or until edges are lightly browned. Do not overbake. Let cool for 2 minutes and remove from cookie sheet. Sprinkle with sugar while warm.
