Snowball Cookies
2 cups all-purpose flour
3 cups finely chopped pecans
½ cup granulated sugar
1 cup butter, softened
1 teaspoon vanilla
powdered sugar for rolling
Heat oven to 325 degrees. In a large mixer bowl, combine flour, nuts, granulated sugar, butter and vanilla. Beat at a low speed, scraping bowl often, until well mixed, 3 or 4 minutes. Shape rounded teaspoonsful of dough into 1 inch balls by rolling in your hands. Place on ungreased cookie sheet. Bake for 18 to 25 minutes, or until very lightly browned. Remove immediately. Roll in powdered sugar while still warm and again when cool.
Makes about 3 dozen.

I use a small ice cream scoop, this makes all the balls the same size and less time is spent forming the balls.
