Banana Bread
4 over ripe bananas
1¼ cup sugar
1 stick of butter, melted and cooled
2 eggs, room temperature
1 teaspoon vanilla
1½ cups flour
½ teaspoon salt
1½ teaspoon baking soda
Preheat oven to 350 degrees. Grease 9 x 5 x 3 loaf pan.
Use mixer to cream banana and sugar for three minutes (whisk). Add butter, eggs, vanilla. Whip until blended.
Mix dry ingredients and add to mixture. Mix until throughly blended. Do not over mix.
Pour into pan.
Bake until form in center, about 1 hour.
