Christmas Trees
1 pound butter
1½ cups sugar
2 eggs
2 teaspoons vanilla
4½ cups flour
¼ teaspoon salt
Cream butter and sugar. Add eggs and vanilla, beating well. Sift flour and salt, add to cream mixture and beat until smooth. Refrigerate for about 2 hours. Roll out dough to about ¹⁄₈ inch on a floured surface and cut out tree shape or any other shape you like. Place cookies on an ungreased cookie sheet and bake 8 to 10 minutes, or until just lightly browned on the edges. Cool on a rack. When cookies are cool dip half in chocolate dip and cool on waxed paper.
Chocolate Dip
6 ounces semi-sweet chocolate pieces
½ teaspoon Crisco
Melt chocolate pieces and Crisco over hot water (be sure not to boil water) in the top of a double boiler. Dip each end of the log in the chocolate dip and cool on waxed paper. While chocolate is still wet, you can dip in chopped nuts or assorted sprinkles.
Cindy's Tips:
I usually use a spoon to put chocolate on just the front of the cookie, otherwise they are too fat and you won't have enough chocolate.
It is very important not to boil the water, or let any water get in the chocolate. This will cause the chocolate to separate.
You can use chocolate melts instead simply microwave.
When I'm in a hurry I take a fork and dip it in chocolate and drizzle over a whole pan of trees.
